It is a popular dish in Singapore also referred to as “ Mutabbak, Matabbak or Mutabbaq which means folded. It is a stuffed pancake with stuffed vegetables and meat in it which is eaten in many parts of South East Asia which originated by the Indian Muslims outside India. The recipe may vary from region to region.

You can eat its vegetarian version or even the sweet version.

Recipe:

Ingredients

Plain Flour

Plain Flour: 2 ½ cups

Tomatoes : 1 medium chopped

Coriander leaves

green chillies

Green Chilies sliced

Method:

Put Salt and Flour into a Bowl.

And add ghee into it.

Put egg, evaporated milk and water in a measuring cup until it measures 200 ml.

Now pour the mixture in a well on the center of the dough.

Knead the dough until it is soft.

Rub oil on another surface and knead the dough on the oil until it is smooth.

Divide the dough into small portions and make small balls of it and rub oil onto them and keep them for 1 to 2 hours or overnight.

In a pan, put 2 tbsp Oil.

Fry the onion and ginger&garlic paste until the raw aroma leaves and the onions are fried.

Put the chicken now along with black pepper, salt, chili powder, and cumin powder.

Add some water until the chicken boils.

When the chicken is ready, keep it aside until it is a bit warm.

On another bowl, beat the eggs, and add salt and black pepper and mix it well.

Followed by Coriander leaves and green chilies onto the mixture and mix well.

Then add tomatoes and spring onion and mix it more.

Then add the chicken in it.

(Make sure the chicken is not too hot.)

Your stuffing is ready.

Now make chapatti from the kneaded balls and spread it a bit.

Then add the stuffing into it and fold it and fry it on a pan with minimum oil.

(Make Sure you do not put too much oil or the eggs will get overcooked.

Now fry the others in the same way.

Your Murtabak is ready to Serve.
